YOU KNOW THE SAYING:
IF A FOOD IS DELICIOUS, THEN IT MUST BE fatty or Otherwise bad for your health. Well, the exotic oriental mushroom known as shiitake (LENTINULA edodes) shows that nothing could be further from the truth. This large fleshy mushroom is an exquisite food with an extaordinary nutritional profile and many scientifically Proven medicinal benefits. Shiitake's delicate-yet-wild woodsy taste adds a gourmet flair to almost any dish. Moreover, all eight amino acids are present in a ratio similar to the "ideal protein" for human nutrition. Shiitake is rich in the amino acids leucine and lysine, which are deficient in many grains. Shiitake is also a good source of B vitamins, including the ever-illusive B.sub.12. It is, however, shiitake's medicinal possibilities that are getting worldwide attention. In the last two decades, scientists have isolated substances from shiitake that may play a role in the cure and prevention of modem civilization's dreaded illnesses of heart disease, cancer, and AIDS.

Since shiitake and other mushrooms have no green pigments (chlorophyll), they cannot make food from sunlight as do other plants but must live by eating plants or animals. Shiitake's favorite food is dead, hardwood trees. The word " shii " is derived from the shii tree (Quercus cuspidata), an oak of central and southern Japan upon which shiitake most often grow. "Takell means mushroom in Japanese, so it is redundant to say "shiitake mushroom." Shittake don't grow wild in North America, as they do in parts of the Far East, where people have been cultivating them for centuries, first by nurturing them in the wild and since 1942 by introducing the fungus to fresh-cut logs.


SHIITAKE MYCELIUM BIOMASS (SHIMYC)

Garuda’s Shiitake Mycelium Biomass consists of a high protein food base totally permeated and digested by a dense growth of LENTINULA edodes mycelium. The mycelium consumes the food materials as it synthesizes its own unique LENTINULA genetic compounds.

Shiitake Mycelium is grown, harvested, and powdered in the same manner as Reishi Mycelium Biomass. The insoluble powder can be used to formulate various types of health food tablets, capsules, or teas similar to those that can be made from Reishi Mycelium Biomass, but taking advantage of the unique compounds found in LENTINULA edodes mycelium.

To prepare L.E.M., Shiitake Mycelium Extract, LENTINULA edodes mycelium biomass is extracted with water to yield a concentrated form of Shiitake mycelium polysaccharides and related compounds such as lentinan and active lignins. The extract is dried into a water-soluble powder.

This powder can be used alone for the production of healthful beverages and nutritional supplements or used in combination with other mushroom extracts and powders to formulate products that contain a wide and varied range of active components. L.E.M., Shiitake Mycelium Extract can be used for the production of tablets, capsules, ampules, beverages, and cosmetics.

Garuda International's Shiitake Mushroom Extract is produced by water extraction of Shiitake Mushrooms (LENTINULA edodes Pileus & Stipe) to yield a concentrated form of Shiitake mushroom polysaccharides and related compounds. The extract is dried into a flavorful water-soluble powder.
